Edna Valley

Our appelation designated Pinot Noir that is derived from 667, 777, 115 and 2A clones. Hand harvested under lights at an average of 24.8° Brix, then destemmed with close to 100% whole berries remaining. After a 3-4 day cold soak it was fermented in small open top tanks with a peak fermentation temperature of 80°. Hand punched down many times daily as needed in even intervals. Pressed off just dry, tank settled then racked to small French oak barrels for 16 months aging. Racked two times.
